Instructions
- Prepare the chicken: Place the boneless, skinless chicken breasts at the bottom of a 6-quart slow cooker. If the breasts are very large, cut them in half to ensure even cooking.
- Make the sauce base: In a medium bowl, whisk together the condensed cream of chicken soup, chicken broth, dry Italian dressing mix, garlic powder, and black pepper until well combined. Pour this mixture evenly over the chicken.
- Add cream cheese: Place the cubed, softened cream cheese on top of the chicken and sauce. Do not stir yet.
- Cook: Cover the slow cooker and cook on LOW for 5-6 hours or on HIGH for 3-4 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily.
- Shred the chicken: Remove the lid and use two forks to shred the chicken directly in the pot. Stir well to incorporate the melted cream cheese and sauce until smooth and creamy.
- Add fresh ingredients: Stir in the shredded cheddar cheese and halved cherry tomatoes. Cover and cook for an additional 10-15 minutes, or until the cheese is fully melted and the tomatoes are heated through.
- Serve: Ladle the creamy chicken mixture over bowls of hot cooked white rice. Garnish generously with sliced green onions and extra black pepper if desired.
